Dried Mango Mandarin & Coconut Salad


1 cup cooked Spelt pasta shells
3 pieces of dried Mango cheek
1 Mandarin – peeled and pips removed
1 tbsp dried Goji Berries
2 celery sticks - thinly sliced
1 cup grated raw Butternut Pumpkin
1 spring onion finely chopped
1 cup Coconut milk
¼ cup lime juice
1 tsp of Agave Syrup or Honey
1/8 tsp Nutmeg
1 pinch of Cayenne Pepper
Celtic Salt to taste
½ cup Pecan Nuts – chopped
Baby Spinach or Rocket leaves to garnish

Place small pieces of dried mango in a cup of hot water. Leave to soak for 15 minutes. Place leaves in a serving bowl then add mandarin segments, goji berries, celery and onion and Pumpkin. Combine coconut milk, lime, agave, spices and salt in a shaker. Add rehydrated mango pieces then pour on dressing just before serving.
